她在繁忙的工作之余,喜欢制作饼干和蛋糕等甜点。节日来临之际,她制作饼干和蛋糕,赠送给社区的老人、义工和办公室职员。
橙味蛋糕是她的拿手甜点,她和贴心姐妹网读者分享她的橙味蛋糕制作方法。
橙味蛋糕(Orange Cake)
1 1/2 Cup gluten free all purpose flour
1/2 Cup sugar
1 teaspoon baking soda
1 teaspoon xanthan gum
1/4 teaspoon salt
Grated peel of 1 orange
2/3 Cup orange juice
5 teaspoon vegetable oil
1. Pre-heat oven to 350F; spray 9" round cake pan with nonstick cooking spray.
2. Combine flour, sugar, baking soda, xanthan gum, salt + orange peel in medium bowl. Combine orange juice + oil in small bowl or measuring cup. Add wet ingredients to flour mixture + stir until smooth. Spread in prepared pan.
3. Bake 30 min or until toothpick inserted into centre comes out clean. Prepare Orange No Butter Buttercream Frosting.
4. Cool cake in pan on wire 5 min; remove from pan + cool completely; frost cake.
Orange No-Butter Buttercream Frosting
1/2 Cup dairy free margarine (not spread)
2 teaspoon grated orange peel
2 teaspoon orange juice
1 teaspoon vanilla
4 Cup icing sugar
1. Beat margarine in medium bowl @ medium speed until light+ fluffy; beat in orange peel, orange juice + vanilla.
2. Gradually beat in icing sugar.
