Avocado, Mango, Date & Yogurt Smoothie
Ingredients:
1 ripe Avocado from Mexico, halved, pitted, scooped out
2 cups cubed mango, fresh or lightly thawed from frozen
2 cups plain yogurt (1 cup yogurt & 1 cup milk if you want it thinner)
2 teaspoons lime juice
6 Medjool dates
2 tablespoons coarsely chopped pistachios, pecans or almonds to sprinkle on top (optional)
*serves 2
Directions:
1. Place the mango, yogurt, avocado, lime juice and dates in the blender and purée until completely smooth
2. Sprinkle pistachios on top and serve
CHEF'S TIP: You may add a few ice cubes to the blender to make it more of a frappé |
